marinated bocconcini mozzarella cheese

chopped red onion

scallions
chopped

chopped tomatoes

teaspoon
dried oregano

marinade oil
1/3
cup
red wine vinegar
Instructions
Drain marinade oil from the cheese and measure. Use half cup in the salad. If you don't have enough, top up with olive oil.
If your cheese was in plain brine, drain that and marinate in an oil based Italian salad dressing.
Stir together and chill one hour before serving.
