Persian Blueberry Anar Salad with Cucumber and Goat Cheese

Ingredients
  

Salad

  • 1 English cucumber chopped
  • 1 cup fresh blueberries
  • 1 cup pomegranate arils
  • 1/2 cup scallions
  • 4 ounces fresh goat cheese crumbles
  • 1 tablespoon chiffonade fresh mint leaves

Dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons blueberry vinegar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • salt and black pepper

Instructions
 

  • Combine salad ingredients in a bowl.
  • Whisk together the dressing and combine with salad.
