Ingredients
  

  • 1 pound onions 2 large
  • 3 bell peppers mixed colors
  • 2 tablespoons olive oil or ghee
  • 1 pound boneless chicken breast sliced into chunks
  • 28 ounces tomato puree
  • 1/4 cup sliced fresh jalapeno peppers
  • 1/4 cup fresh lemon juice
  • 1/4 cup tandoori spice
  • 1 tablespoon ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 teaspoons brown sugar
  • 1 cup water
  • 2 tablespoons grated ginger root

Instructions
 

  • Heat oil in a deep skillet and saute the onions and peppers until limp; stir in the chicken chunks and cook until browned.
  • Add the tomato puree, jalapenos, lemon juice, tandoori spice, ground coriander, cumin, salt. pepper, brown sugar, ginger and water.
  • Bring to a boil, then reduce heat, cover and simmer for 25-30 minutes.
  • Serve with hot rice.
