Fiesta Chicken Sandwiches

  • slow cooker


  • 2-1/2 pounds boneless chicken breast
  • 1 cup mild or medium jarred salsa
  • 2/3 cup tomato juice
  • 1/4 cup pickled jalapenos chopped
  • 1 ounce packet taco seasoning
  • 1/4 cup minced fresh onion
  • 1-1/3 22 ounces each full package packages Rhodes Warm & Serve Soft White rolls (count 16 rolls)
  • shredded lettuce as desired
  • diced tomatoes as desired
  • finely shredded cheddar cheese as desired
  • salsa casera or other spicy taco sauce optional, as desired


  • Place chicken breasts in slow cooker.
  • Stir together the salsa, tomato juice, jalapenos, taco seasoning, minced onion and pour over the chicken.
  • Cover slow cooker and cook chicken on low for 4 hours.
  • Shred chicken with forks and toss with sauce in the crock.
  • Prepare/warm Rhodes rolls according to your preferred package directions.
  • Slice and fill with shredded chicken, adding toppings and spicier salsa as desired.
