Slow Cooker Chicken & Rice Soup

  • 5- pound whole roasting chicken
  • 1 large onion chopped
  • 3 carrots sliced
  • 2 ribs celery sliced
  • 1 tablespoon chopped garlic
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 2-4 teaspoons salt
  • 2 teaspoons black pepper
  • 8 cups boiling water
  • 8- ounce package Banza rice made from chickpeas
  • 1-1/2 tablespoons minced Italian parsley


  • Place all ingredients (except rice and parsley) in the slow cooker and top with the boiling water.
  • Cover cooker and cook on low for 6 hours.
  • Remove chicken; Strip meat from the bones and discard the skin and carcass.
  • Chop the meat into bite sized pieces and add back to the cooker along with the rice and chopped parsley.
  • Cover and continue to cook on HIGH for 10-15 minutes or until rice is tender.
