whole roasting chicken

large onion
chopped
3
carrots
sliced
2
ribs celery
sliced

tablespoon
chopped garlic
2
bay leaves
1
teaspoon
dried thyme
1
teaspoon
dried marjoram

teaspoons
salt

teaspoons
black pepper
8
cups
boiling water
8-
ounce
package Banza rice made from chickpeas
1-1/2
tablespoons
minced Italian parsley
Instructions
Place all ingredients (except rice and parsley) in the slow cooker and top with the boiling water.
Cover cooker and cook on low for 6 hours.
Remove chicken; Strip meat from the bones and discard the skin and carcass.
Chop the meat into bite sized pieces and add back to the cooker along with the rice and chopped parsley.
Cover and continue to cook on HIGH for 10-15 minutes or until rice is tender.
