Leprechaun Charms Cookies

Ingredients
  

  • 1/2 cup soft butter
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon green food coloring (optional)
  • 1 teaspoon vanilla extract
  • 1-3/4 cups all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mini charms dried marshmallows
  • 9 ounces white chocolate chips

Instructions
 

  • Preheat oven to 350F.
  • Cream the sugars with the butter and shortening then stir in the eggs, food coloring and vanilla.
  • Add the flour and oats and thoroughly mix.
  • Stir in the dried marshmallows and white chips.
  • Drop by rounded tablespoons or use a cookie scoop onto a parchment lined cookie sheet about one dozen per sheet.
  • Bake for 12-14 minutes or until lightly browned at the edges.
  • Cool a few minutes on the pan, then transfer to a wire rack to finish cooling.
