Strawberry Banana Bread

large egg plus 1 egg white
mashed (one cup)
chopped ripe strawberries
to coat berries
Bob's Red Mill coarse sparkling sugars
Preheat oven to 375F.
Spray a 9x5x3 inch baking pan with Baker's Release spray.
Whisk the melted butter with sugar then add the rest of the wet ingredients.
In another bowl, stir the flour, baking soda, and salt.
Mix with the wet batter.
Toss strawberries in flour then gently stir in.
Spread the batter in the loaf pan, smooth the top and sprinkle with coarse sugars.
Bake in the preheated oven for 50-60 minutes or until a toothpick can be inserted and removed without wet batter sticking to it.
Cool in the pan 10 minutes, then turn out of pan and finish cooling on a wire rack.
