Grilled Shrimp Souvlaki on Pita

  • Grill pan; outdoor grill


Shrimp & Marinade:

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons dry white wine
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons tomato paste
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red chili flakes
  • 1/4 teaspoon black pepper

Tzatziki Ingredients:

  • 2 mini cucumbers grated and squeezed dry
  • 1 cup thick Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon berry vinegar apple cider vinegar or white wine vinegar
  • 1/2 teaspoon garlic paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon chopped fresh mint
  • pinch dried dill weed

Other ingredients:

  • 4 pita bread
  • olive oil
  • chopped tomatoes
  • chopped red onion
  • diced feta cheese
  • chopped fresh parsley
  • olives


  • Whisk together the marinade and add shrimp; marinate one or two hours, refrigerated.
  • Stir together the tzatziki sauce and set aside.
  • Prepare grill for direct grilling.
  • Use a grill wok or other grill mesh and spray with nonstick spray.
  • Drain marinade from the shrimp and discard marinade.
  • Heat the grill wok and add the shrimp, stirring until opaque and cooked through.
  • Drizzle pita lightly with olive oil and place on the grate for a few moments to warm and char slightly.
  • Place shrimp and other ingredients on pita, drizzling with tzatziki sauce.
