Quick Cabbage Rolls and Sauerkraut

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 teaspoons chopped garlic
  • 15 ounces canned diced tomatoes (with juice)
  • 24 ounce jar (German-style) sauerkraut
  • 11 ounces canned tomato juice
  • 1 cup water
  • 2 teaspoons granulated sugar
  • 1 teaspoon paprika
  • salt and black pepper (to taste)
  • 2 (12 ounces each) packages frozen Trader Joe's Beef Cabbage Rolls

Instructions
 

  • Saute the onion and garlic in the oil to soften.
  • Stir in the remaining ingredients except cabbage rolls and bring to a boil.
  • Place frozen cabbage rolls right on top.
  • Reduce heat, cover and simmer for thirty minutes.
