Honey Roasted Figs

  • nonstick foil

Ingredients
  

  • 1 pound fresh figs any type (I used white tiger figs, which are light green in color)
  • 1 tablespoon lemon juice
  • 1 tablespoon melted butter
  • honey (as needed)
  • 4 ounces soft goat cheese (chevre)
  • 2 dozen rainforest or other fruit and nut crackers

Instructions
 

  • Preheat oven to 425F.
  • Line a small baking tray with nonstick foil.
  • Trim ends of figs and slice in half; place cut side up on the baking sheet.
  • Stir together the butter and lemon and drizzle over.
  • Then drizzle with honey, enough to give them good coverage. Doesn't need to be exact.
  • Roast for thirty minutes.
  • Serve warm on crackers with soft goat cheese and a little of the honey juice drizzled over if it hasn't thickened too much.
