Garlic and Cheese Soup

  • 1 cup diced celery
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 4 tablespoons butter
  • 2 teaspoons salt
  • 1 teaspoon white pepper
  • 1 teaspoon dried thyme
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 2-1/2 cups milk
  • 8 ounces shredded cheddar cheese
  • 1 cup roasted garlic cloves


  • Saute the onion and celery with the minced garlic in butter until the onion and celery soften.
  • Stir in the flour to coat the vegetables along with the salt, pepper and thyme.
  • Add the chicken broth, milk and roasted garlic clove and bring to a boil, stirring.
  • Boil one minute to thicken, and remove from heat.
  • Stir in the cheese and continue stirring until it melts.
