Roasted Brussels Sprouts with Garlic and Lemon

  • 1 pound fresh Brussels Sprouts (trimmed and halved)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 lemon
  • 1/4 cup roasted garlic cloves
  • 1/4 cup shredded Parmesan cheese


  • Preheat oven to 400F.
  • Toss Brussies with olive oil, salt and pepper, garlic powder, zest of the lemon and the roasted garlic cloves.
  • Place on a nonstick foil lined baking sheet.
  • Roast at 400F for 30 minutes, then stir.
  • Sprinkle with Parm and roast 15 minutes more.
  • Squeeze juice from half the lemon over all; reserve the other half of lemon for something else.
