Jamaican Jerk Chicken Burger

Ingredients
  

Jerk Sauce (1 cup):

  • 1/2 cup ketchup
  • 1 tablespoon dark soy sauce
  • 1 tablespoon light molasses
  • 1 tablespoon pickapeppa sauce
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic
  • 1 tablespoon grated ginger
  • 1 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • scotch bonnet pepper sauce (amount to taste; optional)

Burgers:

  • 1 pound ground chicken
  • salt and pepper
  • sliced red onion
  • leaf lettuce
  • 3 toasted burger buns
  • 3 slices pineapple

Instructions
 

  • Mix together jerk sauce and set aside.
  • Make three patties from the ground chicken.
  • Season chicken with salt and black pepper.
  • Grill patties on an oiled grill or grill pan until done, brushing with jerk sauce and allowing to set.
  • Grill pineapple, brushing lightly with sauce.
  • Assemble burgers adding extra sauce as desired as a condiment.
