Curried Delicata Squash Soup

Ingredients
  

  • 20 ounces delicata squash
  • 1 cup chopped onion
  • 1 tablespoon oil
  • 5 cups vegetable stock
  • 1 tablespoon curry powder
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • pinch asafoetida
  • 1/2 teaspoon black pepper
  • 1 teaspoon garam masala

Instructions
 

  • Preheat oven to 425F.
  • Split squash open and remove seeds.
  • Place on baking sheet and bake 20-25 minutes or until tender.
  • Scoop out cooked flesh and mash with fork.
  • While squash roasts, saute onion in oil in a saucepan.
  • When tender, add mashed squash and remaining ingredients.
  • Cook and stir until heated through.
