Strawberry Oatmeal Cookies

Ingredients
  

  • 1 cup unsalted butter (at room temperature)
  • 1-1/2 cups brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup strawberry jelly (melted and cooled) (I used microwave)
  • 2 large eggs
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 8 ounces dried sweetened strawberries (chopped to raisin size)

Instructions
 

  • Preheat oven to 350F.
  • Mix room temperature butter and sugars together until smooth.
  • Stir in cooled runny jelly, eggs and vanilla.
  • Separately, mix flour, baking soda, baking powder and salt.
  • Add to wet mixture.
  • Stir in the oats and chopped strawberries last.
  • Drop dough by rounded tablespoonfuls onto parchment or silpat lined baking sheets.
  • Bake for 13-15 minutes.
  • Cool on pan a few minutes then finish cooling on a wire rack.
