Maple Dijon Brussels Sprouts

  • 12 ounces fresh Brussels sprouts (trimmed and cut in half)
  • 1 tablespoon olive oil
  • salt and black pepper (to taste)
  • 1/2 teaspoon minced garlic
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon prepared Dijon mustard


  • Preheat oven to 400F.
  • Toss Brussels sprouts with olive oil, garlic, salt and black pepper.
  • Spread on a nonstick foil lined baking sheet and roast for 25 minutes.
  • Stir balsamic vinegar, maple syrup and Dijon.
  • Drizzle sprouts with mixture and stir well.
  • Bake 20 minutes more.
