  • 3/4 tsp cinnamon
  • 1/2 tsp. coriander
  • 1/4 tsp nutmeg
  • 1/8 teaspoon cloves
  • 1/8 teaspoon ground ginger
  • pinch cardamom
  • 1/4 teaspoon orange peel optional; use when making Windmill cookies, omit when making cookie butter cream cheese
