Cook bacon until crisp; set aside and reserve bacon grease.
Chop bacon into crumbles.
Add sliced potatoes to the pan, seasoning between layers.
Cook over med-low heat, carefully turning every few minutes and separating clumps of potatoes.
When potatoes start to show some light browning, add the onions and bacon crumbles and continue to cook, turning carefully, until potatoes are nicely browned throughout.
