granulated sugar

brown sugar

large eggs

vanilla extract

all-purpose flour

baking soda

teaspoon
cinnamon

salt

old-fashioned oats

cup
sweetened flaked coconut

cups
diced pitted dates
Instructions
Preheat oven to 350F.
Mix butter with sugar until smooth.
Add eggs one at a time, mixing well after each addition.
Then add vanilla.
Mix flour, baking soda, salt, then add to the dough and mix until smooth.
Fold in the oats and dates.
Use a cookie scoop to drop dough onto parchment lines cookie sheets, slightly apart.
Bake for 14 minutes or until nicely browned.
Cool on the pan a few minutes, then finish cooling on a wire rack.
Repeat with all dough.
