Fire Roasted Corn Fritters

Equipment

  • 1 large skillet
  • cooking oil for skillet as required

Ingredients
  

  • 2 ears charred roasted corn cut from ears (about 2 cups)
  • 1 large egg
  • 3/4 cup whole buttermilk
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1 tablespoon vegetable oil
  • 1 cup ranch dressing optional dip

Instructions
 

  • Stir together batter until smooth.
  • Heat oil several inches deep in a large skillet.
  • Drop batter by one tablespoon increments (I use a cookie scoop for ease) into oil and cook until golden on all sides.
  • Drain on paper toweling.
  • Serve hot with ranch dressing as a dip.
