Bacon and Scallion Mini Quiche

Ingredients
  

  • 5 large eggs
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • pinch grated nutmeg
  • 1/2 cup sliced scallions
  • 6 slices bacon cooked crisp and crumbled
  • 1 cup shredded Swiss cheese
  • 1 pound prepared pie crust compare to 2 single crusts or one refrigerated box

Instructions
 

  • Preheat oven to 350F.
  • In a bowl, beat eggs with whisk, then stir in the cream and seasonings.
  • Using a 2.5 inch cutter, cut out rings of dough and fit into a mini muffin pan.
  • Sprinkle the scallions, bacon and cheese into the dough then top each with the egg mixture.
  • Bake for 30-35 minutes or until lightly browned and domed.
