Jack O' Lantern Tostadas

Equipment

  • 1 Toaster Oven

Ingredients
  

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 16 ounces canned refried beans
  • 14 ounces sliced round colby cheese 9 slices
  • 3 fresh jalapenos or 1 green bell pepper
  • 9 corn tostadas toasted

Instructions
 

  • Brown ground beef with seasoning and drain any fat.
  • Mix in canned refried beans and heat until warmed.
  • Spread 1/3 cup filling on each tostada.
  • Use a paring knife to cut out face shapes on cheese, such as eyes, nose and mouth.
  • Place cheese on top of filling.
  • Cut 9 stem pieces out of fresh jalapenos (or use green pepper if you don't like spicy).
  • Place stem below cheese and above eyes on tostada
  • Heat briefly in a toaster oven or moderate oven until cheese melts.
