Madame Wu's Barbecued Spare Ribs

Ingredients
  

Meat

  • 1-3/4 pounds pork baby back ribs cut into bite size pieces

Marinade

  • 2 tablespoons dark soy sauce
  • 1 teaspoon light soy sauce
  • 3 tablespoons hoisin sauce
  • 2 tablespoons ketchup
  • 2 teaspoons minced garlic
  • 2 tablespoons granulated sugar

Instructions
 

  • Mix marinade and pour over ribs.
  • Marinate 6 hours or overnight.
  • Preheat oven to 400F.
  • Drain marinade and place ribs in a single layer on a foil lined baking sheet and bake for 20 minutes.
  • Reduce heat to 350F and bake for 30 minutes more.
  • Place under the broiler for 1-2 minutes if you like a touch of char on the ribs. I do.
  • Serve warm with sweet and sour dipping sauce and hot mustard sauce if desired.
