Ingredients
  

Salad:

  • 1 head red leaf lettuce chopped
  • 16 ounces roasted beets rinsed and drained
  • 1/2 red onion shaved
  • 1/4 cup roasted salted pumpkin seeds pepitas

Dressing:

  • 2 tablespoons cream style horseradish
  • 1/4 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper

Instructions
 

  • Slice beets or cut into chunks.
  • Arrange beets and shaved onion over greens.
  • Whisk together dressing and drizzle over salads.
  • Sprinkle with toasted pepitas.
