boneless skinless chicken breasts

large egg
beaten

cup
crushed cornbread stuffing mix
1
teaspoon
rubbed sage
salt and black pepper
to taste
butter flavored oil spray
ranch dressing or dip
optional
Instructions
Preheat oven to 375º F.
Flatten chicken with mallet between sheets of plastic wrap.
Lightly beat egg in a shallow bowl or plate and dip chicken in the egg wash.
Stir together crushed cornmeal with the rubbed sage.
Line a baking sheet with foil and place egg-dipped chicken on the foil. Season to taste with salt and black pepper.
Press cornmeal crumbs onto chicken, then spray liberally with butter flavored spray, then flip the chicken over and do the other side.
Bake the chicken in a preheated oven for 30 minutes, turning over once midway through baking time, until golden and lightly browned on both sides.
Cut into strips if you wish and serve with ranch dressing/dip as desired.
