Equipment

  • 1 12-cavity nonstick muffin tin

Ingredients
  

  • 2 ounces dried apple rings
  • 1 cup boiling water
  • 1-1/2 cups all bran cereal not flakes
  • 1 cup warm milk
  • 1/3 cup melted butter cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1-1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 1 teaspoon apple pie spice
  • 2 tablespoons Wilton crystal sugars

Instructions
 

  • Preheat oven to 375F.
  • Pour boiling water over apple rings in a small bowl and allow to cool.
  • In another larger bowl, pour warmed milk over bran cereal and allow to soften.
  • Drain apple rings and squeeze out excess water; chop apples into smaller bits.
  • Add apples to the bran cereal along with the cooled melted butter, egg, and vanilla, stirring to mix.
  • Then add the flour, sugar, salt, baking powder and apple pie spice to make a batter.
  • Spray a 12-cavity muffin tin with baker's release spray or grease liberally.
  • Fill muffin tin with batter.
  • Sprinkle crystal sugars over the top of the batter.
  • Bake for about 18 minutes; turn muffins out of pan and cool on a wire rack.
