Instructions
Preheat oven to 375F.
Pour boiling water over apple rings in a small bowl and allow to cool.
In another larger bowl, pour warmed milk over bran cereal and allow to soften.
Drain apple rings and squeeze out excess water; chop apples into smaller bits.
Add apples to the bran cereal along with the cooled melted butter, egg, and vanilla, stirring to mix.
Then add the flour, sugar, salt, baking powder and apple pie spice to make a batter.
Spray a 12-cavity muffin tin with baker's release spray or grease liberally.
Fill muffin tin with batter.
Sprinkle crystal sugars over the top of the batter.
Bake for about 18 minutes; turn muffins out of pan and cool on a wire rack.
