Apple Bran Muffins is my recipe of the day with the blogging group Muffin Monday. We group up on the last Monday of the month. And we share our best, latest and most delicious muffins yet.

Today I am sharing my recipe for apple bran muffins.
My inspiration comes from using the flashfood app and getting deals on dried apple slices for more than half off. I was going to make some apple hand pies with them, but since I still have extra containers of it and the expiry is way off from now, I’ll do those later.

Apple Bran Muffins
Equipment
- 1 12-cavity nonstick muffin tin
Ingredients
- 2 ounces dried apple rings
- 1 cup boiling water
- 1-1/2 cups all bran cereal not flakes
- 1 cup warm milk
- 1/3 cup melted butter cooled
- 1 large egg
- 1 teaspoon vanilla extract
- 1-1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 3 teaspoons baking powder
- 1 teaspoon apple pie spice
- 2 tablespoons Wilton crystal sugars
Instructions
- Preheat oven to 375F.
- Pour boiling water over apple rings in a small bowl and allow to cool.
- In another larger bowl, pour warmed milk over bran cereal and allow to soften.
- Drain apple rings and squeeze out excess water; chop apples into smaller bits.
- Add apples to the bran cereal along with the cooled melted butter, egg, and vanilla, stirring to mix.
- Then add the flour, sugar, salt, baking powder and apple pie spice to make a batter.
- Spray a 12-cavity muffin tin with baker's release spray or grease liberally.
- Fill muffin tin with batter.
- Sprinkle crystal sugars over the top of the batter.
- Bake for about 18 minutes; turn muffins out of pan and cool on a wire rack.

I really like the texture of dried apples. Much better than using fresh chopped or applesauce.
