Pasta with Pancetta

I had picked up a markdown package of diced pancetta, the Italian bacon, recently. It’s a wonderful addition to pasta dishes. So I decided to serve that with spaghetti in a light butter-lemon-wine sauce.

Sautéed with onion, garlic, and mushrooms, the pancetta gets lightly browned on the edges. Which really brings out the flavors.

I added some frozen peas (because canned would be too soft and mushy). It made for a delicious, satisfying meal. Hope you enjoy it as much as we did!

Ingredients
  

  • 8 ounces dry spaghetti
  • 8 ounces frozen peas thawed
  • 8 ounces diced pancetta Italian bacon
  • 5 ounces brown Crimini mushrooms sliced
  • 2 tablespoons butter melted
  • 1 tablespoon minced garlic
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried marjoram
  • 1/4 cup fresh lemon juice
  • 6 tablespoons butter
  • 2 tablespoons white wine
  • 1/2 cup shaved Parmesan cheese

Instructions
 

  • Cook spaghetti according to package directions and drain.
  • Melt 2 tablespoons butter in a large skillet.
  • Cook pancetta, mushrooms, garlic, onion, salt, pepper and marjoram until onions and mushrooms soften.
  • Add lemon juice, butter and wine to pan and cook a few minutes to reduce.
  • Toss sauce and cooked spaghetti together and serve hot, sprinkled with Parmesan cheese.

  1. I used spiral pasta and Italian seasoning instead of individual herbs. My DH and I both liked this a lot!
