Creamy Cheesecake Fruit Salad is my recipe of the day. I’m indulging myself and my family with the fresh berries of the season with a cream cheese dressing that reminds of cheesecake.

I’ll admit that I had intended to add some banana and sliced grapes to this. But while I was puttering about with it, I decided to hold off the bananas and just stir them in just prior to serving so I wouldn’t have to put them in an acidic liquid to keep them from oxidizing.
As for the grapes, I completely spaced on this and forgot. So just add them in if you want. Pretty much whatever seasonal fruits you have can go in here. Such as blackberries or sliced peaches.
I would probably pass on the canned fruits because even if well drained, the residual juice might cause the cream to weep.

Creamy Cheesecake Fruit Salad
Equipment
- 1 Stand mixer with whip attachment
Ingredients
- 1 pound cream cheese
- 1/3 cup whipping cream
- 3 teaspoons vanilla
- 1/8 teaspoon salt
- 1-1/2 cups sifted powdered sugar
- 6 ounces fresh raspberries
- 1 pint fresh blueberries
- 1 quart fresh strawberries quartered
Instructions
- Bring cream cheese to room temperature.
- Place cream cheese into a stand mixer fitted with a whip attachment.
- Add whipping cream and vanilla.
- Run on high until whipping cream becomes whipped cream, and mixture is well mixed.
- Fold in fresh fruits.
- Chill before serving if desired.
