Pineapple and Cottage Cheese Ambrosia is my recipe of the day for the first day of Dairy Month this week. I already posted on Monday with my recipe for Macaroni Salad Caprese. And I am  also posting  today and  again on Friday to finish up the week. Wednesday, and Friday.

Pineapple and Cottage Cheese Ambrosia

This particular recipe is very retro and is one of  the popular recipes for cheese salad in the 60’s  and 70’s.

In some ways it is similar to fluff, Watergate salad,  cheddar cheese salad and fruit cocktail salad with whipped cream. All of these very popular for potlucks, holiday get togethers and barbecue cookouts. And isn’t it always delicious to have a bowl of something sweet can you get a spoonful of?  If you’re bringing it to a bbq, you’ll be leaving with an empty bowl.

Ingredients
  

  • 16 ounces small curd cottage cheese (well drained)
  • 5.3 ounces Greek vanilla yogurt
  • 5.3 ounces Greek pineapple yogurt
  • 1/2 cup sifted powdered sugar
  • 1 cup sweetened flaked coconut
  • 1 cup toasted pecans
  • 2 cups chopped fresh pineapple
  • 1/2 cup maraschino cherry halves (rinsed and drained)

Instructions
 

  • Stir together and refrigerate one hour.
