Macaroni Salad Caprese is my recipe of the day for the first day of Dairy Month this week. I will be posting for three days: Monday, Wednesday, and Friday.

Today I posted another noodle salad. And this one is packed with summer flavors. As well, I have added garden fresh tomatoes, chopped fresh buffalo mozzarella, basil pesto. And a few other flavors to fill it out.
In summer, macaroni salad is very popular with my family. So we make it a lot. And I have quite a few mac salad choices stashed away. In this way, I know I will be ready at any time for quick lunches, pot luck side dishes, or hot weather side salads.

Macaroni Salad Caprese
Ingredients
- 3 cups cooked macaroni measure after cooking
- 1 large tomato chopped
- 4 ounces diced fresh mozzarella cheese
- 1 tablespoon small capers
- salt and black pepper to taste
- 1/4 cup mayonnaise
- 2 tablespoons chopped fresh basil
- 1-1/2 teaspoons basil pesto
- 1 tablespoon olive oil
Instructions
- Cook macaroni, drain, and stir together with remaining ingredients.
- Mix and chill for one hour before serving.
