Today I posted another noodle salad. And this one is packed with summer flavors. As well, I have added garden fresh tomatoes, chopped fresh buffalo mozzarella, basil pesto. And a few other flavors to fill it out.

In summer, macaroni salad is very popular with my family. So we make it a lot. And I have quite a few mac salad choices stashed away. In this way, I know I will be ready at any time for quick lunches, pot luck side dishes, or hot weather side salads.

Ingredients
  

  • 3 cups cooked macaroni measure after cooking
  • 1 large tomato chopped
  • 4 ounces diced fresh mozzarella cheese
  • 1 tablespoon small capers
  • salt and black pepper to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped fresh basil
  • 1-1/2 teaspoons basil pesto
  • 1 tablespoon olive oil

Instructions
 

  • Cook macaroni, drain, and stir together with remaining ingredients.
  • Mix and chill for one hour before serving.
