Creamy Parmesan Macaroni Salad is my recipe of the day. It is another of the mac salads I tend to do very well at making. Probably the reason being all the practice I have with it. Because I really dislike most store bought mac salads. They are usually too sweet or just weird tasting.

I had intended to publish my recipe for Easy Slow Cooker Goulash today but fell behind and missed my publishing deadline. From there, I pushed it offshore to post in another upcoming slow cooker event. So stay tuned if you were looking forward to it.
Instead I had my creamy Parm mac salad, which I cooked the same day I made my Creamy Parmesan Salad Dressing. And this salad is, in fact, the reason the dressing exists. Because I needed some to make this salad. And you’ll be needing it too. Unless you use a jar dressing. But if I have given you the recipe, why would you do that? It tastes better made at home.

But here it is. I hope you enjoy. It is definitely a great brown bag lunch pack-in. That and a ham sandwich with some fruit and you’re set.

Creamy Parmesan Macaroni Salad
Ingredients
- 2-1/2 cups uncooked macaroni noodles (cooking according to package directions)
- 1/2 cupcreamy Parmesan salad dressing (see my recipe for that or use store bought)
- 1/2 cup mayonnaise
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped scallions
- 1 tablespoon chopped fresh Italian parsley
- 4 ounce jar diced pimiento peppers (drained)
- 1/2 cup shredded Parmesan cheese
- 6 slices bacon (cooked crisp and crumbled)
Instructions
- Combine all ingredients and chill at least one hour before serving.
