Shrimp and macaroni salad is my recipe of the day with the blogging group “From Our Dinner Table”. We meet weekly to post on various food topics. This week we are sharing recipes for favorite salads.
Pasta salad is always a favorite of mine, as there are so many ways to prepare them.
This take on the Southern staple included shrimp for an interesting variation. I think it makes a perfect side for a fish fry or even something like salmon on the grill.
While being perfectly tasty as part of a picnic, be sure to keep the portions refrigerated for food safety since this contains mayonnaise. We like Duke’s mayo but use whatever you like including Miracle Whip.
People are going to use what they like anyway.

Shrimp and Macaroni Salad
Ingredients
- 3 cups uncooked macaroni noodles
- 8 ounces cooked salad shrimp
- 2 ounce jar diced pimiento peppers drained
- 3 scallions sliced
- 1/2 cup finely diced celery
- 1 tablespoon small nonpareil capers
- 1 medium tomato diced
- 1 tablespoon minced fresh Italian parsley
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon apple cider vinegar
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic salt
Instructions
- Cook pasta for 7-8 minutes in boiling salted water, then drain, rinse and cool.
- Mix with remaining ingredients and chill before serving.
