Old-Fashioned Mashed Potato Salad is my recipe of the day. With a smooth creamy texture, it is the perfect kind of potato salad for those who don’t like things “chunky”.
I had been reading about it in an online cooking group. While it isn’t the type of texture I usually have in salads, I have read it is quite popular with many people. So I thought I would give it a try.
Apparently it is like a potato salad that Martina McBride makes although the flavors in this one are a bit different.
My mom made a potato salad that chopped the potatoes first, and it made the edges a bit softer, and I thought I would flavor it like that. So this recipe is quite similar to Mom’s with a bit of ingredient change. It is one my family craves often, so it was a good choice.
It has lots of eggs, and no mustard which sets it apart as an American style salad instead of mustard style. The flavor is lightly sweet. Mom was always fond of topping hers with some sliced radishes from the garden, so besides the expected egg slices, I added some of those as well.
Old-Fashioned Mashed Potato Salad
I like to chill this salad for a few hours before serving. But it can be served either cold or at room temperature. Be warned that with these type of ingredients, this is not a salad to sit out at a picnic and forget about. Serve it up then put it away immediately.
If you like something better for a picnic, consider a vinegar based slaw.

Old-Fashioned Mashed Potato Salad
Ingredients
- 2 pounds russet potatoes peeled and diced
- 3/4 cup French salad dressing orange type
- 3/4 cup Miracle Whip salad dressing
- 3 hard-cooked eggs chopped
- 1/2 cup chopped celery
- 6 chopped radishes
- 1/2 cup chopped green onions or scallions
- 1/4 cup sweet pickle relish
- 1-2 tablespoons chopped Italian parsley
- 1 teaspoon celery seed
- salt and black pepper to taste
- 2 tablespoons sweet relish juice
- 1 hard-cooked egg sliced (garnish)
- 1 radish sliced (garnish)
- 1 teaspoon chopped Italian parsley garnish
Instructions
- Cook potatoes in boiling salted water for 10-12 minutes or until fork tender; drain.
- Place potatoes in mixing bowl and add French dressing while it is hot.
- Mash potatoes and stir in remaining ingredients except garnishes and chill.
- Before serving, garnish with remaining ingredients.
