Three-Ingredient Refried Bean Soup

My recipe of the day is for Three-Ingredient Refried Bean Soup, which  is another recipe that I had planned to post sometime back with the Soup Swappers group, but had to cancel out of that event after something came up.

I’d also recently joined a Facebook post sharing group that has a focus on  pantry recipes, obviously since some of us may be working out meals straight from the cabinet as our grocery shopping trips become far and few between.

It made me think  of this recipe in particular, which uses a simplicity of three cans plus water. I did garnish it with some cheese, hot sauce and a few chips- obviously since saltines weren’t going to do this soup any favors.

The soup is surprisingly good! I might serve this along with some Baja style hot dogs. Oh and I know some of you don’t like hot dogs, but I am a simple girl and love them.

I know this recipe will be great for rough times like the pandemic going on right now. But as well, this is a good one for a camping trip as you can pack the stuff in a box and heat it up on a Coleman stove.  It’s been awhile since I have gone camping, but I always enjoyed eating out in the fresh air. More often we will go to parks and bring a portable grill.

I wonder if the social distancing will bring about a resurgence in camping interest? I have already been thinking about picnics I want to pack on the warm days. Pack up the portable lawn chairs and supplies and head out. Be warned I have already noticed that pavilions and grills have been taped off and are off-limits in most parks. You’ll want to set up away from others perhaps under some  trees.  And please, don’t make it a huge family gathering. Only with those you reside with at the time.

More time for huge picnics later. For now, let’s stay sensible and safe.

Ingredients
  

  • 1 15 ounce can refried beans
  • 1 15 ounce can mild chili beans in sauce
  • 1 10 ounce can Rotel tomatoes and green chilies
  • 1 cup water
  • optional garnish: cheese, crushed chips or crackers

Instructions
 

  • Stir together in a saucepan over moderate heat until heated through.
