Old-Fashioned Mashed Potato Salad

Ingredients
  

  • 2 pounds russet potatoes peeled and diced
  • 3/4 cup French salad dressing orange type
  • 3/4 cup Miracle Whip salad dressing
  • 3 hard-cooked eggs chopped
  • 1/2 cup chopped celery
  • 6 chopped radishes
  • 1/2 cup chopped green onions or scallions
  • 1/4 cup sweet pickle relish
  • 1-2 tablespoons chopped Italian parsley
  • 1 teaspoon celery seed
  • salt and black pepper to taste
  • 2 tablespoons sweet relish juice
  • 1 hard-cooked egg sliced (garnish)
  • 1 radish sliced (garnish)
  • 1 teaspoon chopped Italian parsley garnish

Instructions
 

  • Cook potatoes in boiling salted water for 10-12 minutes or until fork tender; drain.
  • Place potatoes in mixing bowl and add French dressing while it is hot.
  • Mash potatoes and stir in remaining ingredients except garnishes and chill.
  • Before serving, garnish with remaining ingredients.
