Mango Fruit Custard is my recipe of the day for the blogging event Spring Sweets Week. This is an annual event held by prominent food bloggers in association with various businesses who provide samples of the ingredients to bake with.

Mango Fruit Custard

This is something we like to order all the time as a dessert in Indian restaurants. The consistency will vary from a runny custard with fruit to being almost frozen like ice cream. But it is always delicious.

Usually this dessert is prepared with custard powder. I am making it more accessible to the American cook by substituting instant pudding mix, and  it works fins.

Some recipes will include apple, but I have left it to the mango and fruit cocktail and am very happy with it. Feel fee to add some different fruits if you don’t like canned. Just know the usual fruits generally have grapes as part of the mix.

I would not omit mango. It is fantastic.

Ingredients
  

  • 4 ripe mango
  • 15.25 ounce can fruit cocktail in heavy syrup undrained
  • 3.4 ounce box vanilla instant pudding and pie filling mix
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon vanilla paste
  • 1/2 cup cold milk

Instructions
 

  • Trim mango of skin and pits and dice the fruit and place in a mixing bowl.
  • Drain heavy syrup from fruit cocktail into a different bowl.
  • Add the fruit cocktail to the mango along with the cardamom, and vanilla paste.
  • Stir the pudding mix into the syrup from the can and the milk, mixing well.
  • Fold the fruit in and chill and hour.
