This Mini Coconut-Lemon Quick Bread recipe post is sponsored in conjunction with #SpringSweetsWeek. I received product samples from sponsor companies to help in the creation of the #SpringSweetsWeek recipes. All opinions are mine alone.

Mini Coconut-Lemon Quick Bread is my recipe of the day for the blogging event Spring Sweets Week. Associated bloggers will  be posting yummy recipes all week long in relation to this.

And there’s a giveaway (at the bottom of the post!)

Mini Coconut-Lemon Quick Bread

This particular post is sponsored  with product samples by both  Circulon and Taylor & Colledge who provided the baking  pan and also the extract paste used  in this recipe.

Circulon pan

The Circulon pan is nonstick and is the right size for doing this recipe. If you use another pan, be certain not to fill the baking cavity more than 2/3 full. Regardless of whether you use mini loaf pans  or  regular size loaf pans.

Even though  it is nonstick, I still use release spray and rely upon the nonstick as extra insurance.  That,  combined  with the accurate  cool  down time  of 15 minutes will  ensure your loafs slide out like butter.

Circulon pan with batter

Taylor & Colledge provided me with two types of extract paste. I used   the lemon in this recipe. The extract paste has a creamy consistency not  unlike the drizzle icing I made to go over the top.  So you can be sure it mixes into the batter quite easily. It  is used in the same proportions as regular extracts, so very easy.
