This post is sponsored in conjunction with #SpringSweetsWeek. I received product samples from sponsor companies to help in the creation of the #SpringSweetsWeek recipes. All opinions are mine alone.
Mini Key Lime Pies is my recipe of the day for the blogging event Spring Sweets Week. Associated bloggers will be posting yummy recipes all week long in relation to this.
And there’s a giveaway (at the bottom of the post!)
This particular post is sponsored with product samples by Nairn’s. For which I received a sampling of their flavors of gluten free oat grahams.
I opted to make these simple mini key lime pies because we love anything key lime. And I knew that these stem ginger crackers as crumbs would make the perfect crust.
Ginger and lime are fantastic together, if you have not tried it. I have made key lime pies with gingersnap crusts before but this is even better. Plus the box is the perfect size for the crusts- just crush them all.
The filling is easy to mix, pour, bake and set. Condensed milk is wonderful for so many things, including making a creamy filling. Without the bother of making lime curd.
So do try this recipe and enjoy- I have pumped up the volume on the citrus to right where it should be. No treat needs anemic flavor. You need to know the lime is there. And it is definitely there!li
