Balkan Lamb and Rice Casserole (Djuvec) is a one dish meal that includes lamb, rice, and Ajvar  and topped with a tangy yogurt sauce.

Equipment

  • 1 (Oven safe) covered casserole or Dutch oven

Ingredients
  

  • 1-1/4 pounds boneless lamb cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1 onion chopped
  • 1 teaspoon chopped garlic
  • 2 teaspoons paprika
  • 1 ounce pouch Lipton vegetable recipe dry soup mix
  • 1-3/4 cups hot water
  • 19.4 ounce jar Ajvar vegetable spread
  • 1 cup long grain rice rinsed
  • 1/2 cup plain thick yogurt
  • 2 tablespoons water

Instructions
 

  • Preheat oven to 350F.
  • Ina large oven proof casserole dish or Dutch oven (with a lid for the oven) season the lamb and brown with the onion and garlic in the oil .
  • Stir in the paprika, soup mix, hot water, Ajvar, and rice.
  • Bring to a boil then cover and place in the preheated oven.
  • Bake for one hour, stirring every twenty minutes.
  • After removing from the oven, tuck a clean dry dishtowel under the lid and let rest ten minutes to absorb excess steam.
  • Fluff with fork and dish up.
  • Thin yogurt with some water to a drizzling consistency and drizzle over the rice.
