Instructions
Preheat oven to 350F.
Add dragon fruit and banana to a food processor fitted with a chopping blade.
Puree fruit.
Place fruit in a mixing bowl and whisk in cooled melted butter, milk, eggs, vanilla paste and rum extract.
Separately, stir together the flour, sugar, baking powder, baking soda and salt and add to the wet mix until it forms a smooth batter.
Fold in the chopped ginger.
Spray muffin tin with baker's release spray and fill 2/3 full then sprinkle tops with chopped nuts
Bake for 22-25 minutes until they test done with a toothpick.
Let cool in pan ten minutes, then turn out and finish cooling on a wire rack.
