Banana Dragon Fruit Muffins is my recipe of the day for the blogging event Spring Sweets Week. Associated bloggers have been posting yummy recipes all week long in relation to this. I am posting this recipe today which is my first one for this event. I will be posting again on Wednesday and Friday. Feel free to follow my events calendar on the lower right.
I decided to use my comped dragon fruit to make muffins, adding in the tropical flavors that might go well and ranging from Hawaii to the Caribbean.
I loved the red color of the batter, but sadly enough, it had a color change during baking. Not sure what caused that. Maybe a chemical effect from baking powder or soda. Perhaps just from being baked. Up to now I have not baked dragon fruit.
However ordinary the color became, they are tremendously moist with a nice fruit and nut flavor. Everyone who sampled enjoyed these so I am sure they will be a hit with your family.

Banana Dragon Fruit Muffins
Equipment
- food processor; muffin tin
Ingredients
- 13 ounce red dragon fruit peeled
- 1 small ripe banana 1/2 cup pulp
- 6 tablespoons melted butter cooled
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla paste
- 1 teaspoon rum extract
- 2-1/4 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon chopped candied ginger
- 3/4 cup chopped macadamia nuts
Instructions
- Preheat oven to 350F.
- Add dragon fruit and banana to a food processor fitted with a chopping blade.
- Puree fruit.
- Place fruit in a mixing bowl and whisk in cooled melted butter, milk, eggs, vanilla paste and rum extract.
- Separately, stir together the flour, sugar, baking powder, baking soda and salt and add to the wet mix until it forms a smooth batter.
- Fold in the chopped ginger.
- Spray muffin tin with baker's release spray and fill 2/3 full then sprinkle tops with chopped nuts
- Bake for 22-25 minutes until they test done with a toothpick.
- Let cool in pan ten minutes, then turn out and finish cooling on a wire rack.
