Carrot Cake Cookies is my recipe of the day for the blogging event Spring Sweets Week. Associated bloggers have been posting yummy recipes all week long in relation to this. Carrot Cake Cookies

I decided to bake some carrot cake cookies. They are a spinoff of my favorite Spring cakes. And as easy to make as chocolate chippers using some Hershey’s Crem Cheese chips to be a stand in for cream cheese frosting.

Along with shredded carrot, raisins, nuts and spices, they fill out well. While I often like cookies with milk or coffee, these are perfect with orange juice or orange drink/seltzer.  It brings out the best in the flavors.

Equipment

  • Cookie sheet; parchment

Ingredients
  

  • 1 cup salted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon molasses
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups all-purpose flour
  • 1/2 cup finely grated carrot
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 8 ounces Hershey's Cream Cheese baking morsels

Instructions
 

  • Preheat oven to 350F.
  • Cream together butter with brown sugar and granulated sugar.
  • Add eggs, molasses and vanilla and mix until smooth.
  • Stir together baking soda, salt, cinnamon and flour.
  • Gradually add dry mix to the dough until incorporated.
  • Fold in carrots, raisins, pecans and cream cheese chips.
  • Use a cookie scoop to drop onto a parchment lined baking sheet.
  • Bake 12-14 minutes or until golden.
  • Cool on pan 5-10 minutes then finish cooling on a wire rack.
