Lemon Cooler Cookies have the great thing I love about certain desserts: an abundance of lemon flavor. From cookies to cakes to pies to lemonade ice creams, I love them all. Don’t you?
They have the feel of warm Spring and Summer weather for me. Full of nice zip, they are perfect with a cup of hot tea or a glass of ice cold lemonade. Packed as a dessert in lunches or just a snack time nibble. They are very all-purpose.

Lemon Cooler Cookies with Sugar Sprinkle
I did add a little yellow color to brighten the dough. If you don’t use colorant, just leave it out. It’s up to you.

Notice the cross-hatch from the fork and my messiness with a little sugar falling off. No problem with that on the pan.
You can flatten with a glass or your hand if you like. But the old-fashioned fork suits me just fine.

You can see they puff just the right amount in the bake. But they retain their shape nicely. They are about the size, shape and thickness of a standard peanut butter cookie.
Except lemon of course!

Lemon Cooler Cookies
Equipment
- 1 Anolon nonstick cookie sheet
Ingredients
Cookie Dough Ingredients:
- 1/2 cup unsalted butter softened
- 1 cup powdered sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 teaspoon lemon extract
- 10 drops yellow food coloring optional
- 1-1/2 cups all-purpose flour
- 2 teaspoons Penzey's powdered lemon peel
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Sugar Sprinkle:
- 3/4 cup powdered sugar sifted
- .23 ounce packet Kool-Aid unsweetened lemonade powdered drink mix
- 1 teaspoon vanilla powder
Instructions
- Preheat the oven to 350F.
- Mix together the softened butter with the powdered sugar until smooth.
- Add the egg, vanilla and lemon extracts along with the food coloring (if using), mixing well.
- Add the remaining dough ingredients and stir until combined.
- Cover and refrigerate dough for thirty minutes.
- Separately, sift together the powdered sugar, lemonade drink mix and vanilla powder.
- When dough is chilled, use a one tablespoon size cookie scoop to measure dough, shaping into balls.
- Place those on the nonstick cookie sheet a couple of inches apart.
- Dip a fork into the sugar sprinkle and flatten the dough slightly into a crosshatch (as you would for peanut butter cookies).
- Bake for 12 minutes or until firm and just barely browned at the edges.
- Cool cookies just long enough that they don't burn your fingers handling them.
- Dredge each cookie into the sprinkle to coat with sugar and gently tap off excess.
- Cool completely before packing up.
- You can use any extra sugar sprinkle to sweeten lemonade if you like.
