My recipe of the day is lemon raspberry mascarpone cupcakes for Spring Sweets Week,. These have a light lemony cake and a creamy raspberry filling and a tart but sweet lemony pink frosting. More details about those delish cupcakes are below. But first, the main event!

Lemon and Raspberry Mascarpone Cupcakes

I had been thinking of doing a lemon chiffon cake this week which I wanted to tote up to my daughter’s home a few hours drive from here. But has luck would have it travel plans are nixed.

Small Plans and Recipe Size

And considering I often share my desserts with friends and family, and having just me and the hubz to feed for right now, I have scaled this recipe way back.

Did you know a cupcake could be chopped from the usual one to two dozen down to just four? That’s a much more manageable size.

Of course, you can still build this out by multiplying everything by three. That will yield a nice dozen. For future plans.

These have lemon cake and the raspberry mascarpone filling which is sweetened cheese and fresh fruit. And them topped with a nice lemony frosting in a blushing hue.

I’ve used several sponsor  products in this recipe, including extracts from Adams, sugar  from Dixie Crystals, and the instant read thermometer from Deiss to read my cupcake doneness. Less waste when you don’t need to use toothpicks, and very accurate since the  probe knows exactly what is going on deep inside.

A good range of temp is 200F-205F which correlates to the same as if a toothpick ad no wet batter sticking to it.

These are hollowed out after baking. You can use  an apple corer tool to help, or cut with a thin knife- just make sure to make you hole big enough to hold the filling! Then top  that with crumbs and pat down and chill so you can ice them easily without  issues.

Ingredients
  

Cupcakes:

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cooled melted butter
  • 1/4 cup granulated sugar
  • 3 tablespoons egg whites
  • 1 tablespoon plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract
  • 3 drops yellow food coloring optional

Filling:

  • 1/3 cup mascarpone cheese
  • 1 tablespoon powdered sugar
  • 1/4 cup mashed fresh raspberries
  • 1 tablespoon raspberry jam

Frosting:

  • 1/4 cup mascarpone cheese
  • 2 tablespoons soft butter
  • 1-1/2 cups sifted powdered sugar
  • 3 drops red food coloring optional
  • 1 tablespoon heavy cream
  • 1/2 teaspoon lemon extract
  • 1/4 teaspoon vanilla extract
  • 4 fresh raspberries for decoration

Instructions
 

  • Preheat oven to 350F.
  • Mix together ingredients for the cupcake batter until smooth and divide into four cupcake liners in a muffin pan.
  • Bake for 20 minutes or until an instant read thermometer reads 200F-205F degrees, which is the proper doneness.
  • Allow cupcakes to cool.
  • Hollow out centers of cupcakes, reserving cake crumbs, and using an apple corer to do this.
  • Stir together the raspberry filling and spoon into the cavities; top the filling with crumbs and pat down lightly.
  • Chill cupcakes for about 15 minutes to firm up the filling.
  • Stir together the frosting (except the four raspberries) until smooth and pipe or spread onto the tops of the cupcakes.
  • Chill until firm and top with fresh raspberries, if desired.
