Coffee Cake Ingredients
This coffee cake has fresh strawberries and chocolate chips in the batter. Plus an oat crumb topping which includes chocolate chip grahams, chocolate chips and oats.
This is one of my husband’s favorite coffee cakes of mine. I asked him if he thought it tasted like a chocolate covered strawberry and he said yes.
The cake is indeed very rich and perfect for either breakfast, afternoon tea or a simple dessert.

- 1 cup chopped fresh strawberries
- 1/2 cup semi-sweet chocolate chips
- 1 cup granulated sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup melted cooled butter
- 3/4 cup buttermilk
- 1 egg lightly beaten
Crumb Topping:
- 40 grams Nairn's chocolate chip oat graham crackers 4 crackers

- Add the sugar, baking powder and salt and stir again.
- Separately, mix up the cooled melted butter with the buttermilk and beaten egg.
- Gently stir in to the dry ingredients just to blend.
- Spread the batter in the cake pan and smooth out.
Crumb Topping:
- Crush the grahams into crumbs and mix with remaining ingredients for the toppng until it is crumbly and evenly coated with butter.
- Sprinkle the crumb topping over the cake batter evenly.
- Bake for 40-45 minutes or until a toothpick inserted comes out without wet batter.
- Cool in the pan then slice into 3x3 for nine servings.
- Optional: Sprinkle top with powdered sugar before serving and/or sliced strawberries. (These two ingredients not included in nutrition info as they are optional)
