Cranberry Bliss Coffee Cake is my recipe of the day with Cranberry Week. This is the third of three recipes I am posting on this delicious topic this year. It remains to be seen if I can squeeze in any more cranberry recipes during the season. Everything has been so busy.
I decided to make a coffee cake version of the Cranberry Bliss Bar (which I love). While I do adore the bliss bars to eat when I have cookies, bars and brownies, the cake is lighter and perfect for having with coffee.
All that remains to be decided is whether to enjoy it around 3pm when I grab a cup of coffee with caffeine to wake me up. Or to enjoy it in the early morning, again with coffee, to wake me up. I don’t really care which, as long as someone saves me a slice.
As far as thinking ahead for what to serve at brunch on the holidays, this kind of thing is perfect for me. If I have other kitchen plans, I certainly don’t want to be putting together a hot breakfast. Regardless of whether or not I have a big crowd (this year it is only three).
This also keeps nicely in the fridge if you have extra. My daughter and I are both fond of cakes served very cold. Which makes it wonderful served with fresh squeezed orange juice.

Equipment
- 9 x13-inch baking pan
Ingredients
Coffee Cake:
- 1/2 cup softened butter
- 1 cup granulated sugar
- 2 large eggs
- 3/4 cup milk
- 1-1/2 teaspoons vanilla extract
- 2-1/2 cups all-purpose flour
- 1 teaspoon salt
- 1-1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1-1/2 teaspoons ground ginger
- 3/4 cup dried sweetened cranberries (chopped) (craisins)
- 1/2 cup chopped crystallized ginger
- 1/2 cup white chocolate chips
Frosting:
- 1-1/2 cups sifted powdered sugar
- 1 teaspoon vanilla
- 2 teaspoons orange juice
- 4 ounces soft butter
- 4 ounces soft cream cheese
- 3/4 cup chopped craisins
- 1 ounce grated white chocolate
- 4 teaspoons grated orange peel
Instructions
- Preheat oven to 350F.
- Spray a 9x13-inch baking pan with baker's release spray.
- Cream together the butter and sugar; add eggs one at a time and mix again.
- Continue mixing in milk and vanilla until smooth.
- Combine the flour, salt, baking powder, baking soda, and ground ginger.
- Add to the wet mixture and blend to form a smooth batter.
- Fold in the cranberries, crystallized ginger, and white chocolate chips.
- Pour batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes or until a toothpick can go in and out without wet batter stuck to it.
- Cool in pan.
- When coffee cake is cool, mix the sifted powdered sugar, vanilla, orange juice, butter and cream cheese until smooth and spread on cake.
- Sprinkle with remaining craisins, white chocolate shavings and orange peel before it dries.
