Coffee Cake:

Frosting:

sifted powdered sugar

teaspoon
vanilla

orange juice

ounces
soft butter
4
ounces
soft cream cheese

chopped craisins
1
ounce
grated white chocolate
4
teaspoons
grated orange peel
Instructions
Preheat oven to 350F.
Spray a 9x13-inch baking pan with baker's release spray.
Cream together the butter and sugar; add eggs one at a time and mix again.
Continue mixing in milk and vanilla until smooth.
Combine the flour, salt, baking powder, baking soda, and ground ginger.
Add to the wet mixture and blend to form a smooth batter.
Fold in the cranberries, crystallized ginger, and white chocolate chips.
Pour batter into the prepared pan and smooth the top.
Bake for 35-40 minutes or until a toothpick can go in and out without wet batter stuck to it.
Cool in pan.
When coffee cake is cool, mix the sifted powdered sugar, vanilla, orange juice, butter and cream cheese until smooth and spread on cake.
Sprinkle with remaining craisins, white chocolate shavings and orange peel before it dries.
