Roasted Asparagus with Tangerine Gastrique

For my recipe, I wanted to do some simple yet elegant asparagus. Often I will roast some asparagus with some garlic. But today I decided to do a gastrique. This is a sort of simple sweet and sour sauce made with citrus juice, sugar and a little vinegar. It is cooked until syrupy.

Poured over the asparagus spears, it is sort of like a sweet and sour citrus honey.  Think of it as a somewhat homemade agrodolce sauce, albeit the gastrique is French whereas the agrodolce is Italian. They are very similar. And also easy, elegant and delicious. I am sure you will enjoy.

  1. Roasting and grilling are my two favorite ways to prepare asparagus. This gastrique sounds like the perfect way to add some additional brightness and flavor.
