Grilled Asparagus with Lemon and Feta

My daily recipe includes fresh asparagus, one of my favorite vegetables to grill. I top with with  feta cheese, herbs, oil and lmon, and serve with some grilled lemon which gets a slight smoky edge to it.

I often will serve this type of asparagus with Greek foods but it is good with pretty much anything. This time I served it with Grilled Chicken Piccata. And you can find that recipe on Friday as I finish  up the week.

Either of these is perfect served as well with rice pilaf or maybe grilled potatoes. If someone can man the kitchen it is also great with pasta. Or simply make that ahead, since the rest takes only a few minutes more anyway.

Equipment

  • 1 Grill

Ingredients
  

  • 1 pound fresh asparagus spears
  • 4 spritzes cooking spray
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1 fresh lemon cut in half
  • 1/4 cup finely crumbled feta cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes

Instructions
 

  • Trim asparagus spears and place on a cooking tray.
  • Spritz liberally with cooking spray and sprinkle with salt, pepper, Italian seasoning and garlic powder.
  • Grill asparagus over moderate heat (375F) on an oiled grate until fork tender.
  • Spritz lemon halves with spray and grill until lightly charred.
  • Remove to a platter and drizzle asparagus with lemon juice, olive oil, red pepper flakes and feta cheese.

  2. Grilled aspargus is my favorite. It has the best flavor but I have never topped mine with lemon and feta. So I am off to make a batch so I can try it like this. Thanks for the recipe.
